Asian Slaw with Cashew Nuts Recipe
1 Apple or Pear
1/3 cup roasted peanuts or Cashew nuts
1/4 cup coriander leaves
1 inch Ginger cut in Julienne
1/2 Tsp Sesame oil
2 Tbsp Soy Sauce
1/4 cup lemon juice or rice vinegar
1 Tbsp brown sugar
1 Tbsp Peanut Butter
1 Tbsp olive oil
Red Chilli Flakes (optional)
Finely shred cabbage. Thinly slice the apple or pear and then cut into thin matchsticks. Peel carrot, then shred or coarsely grate, or cut into thin matchsticks. Remove the seeds from cucumber and cut into matchsticks. Chop the coriander leaves.
Mix all dressing ingredients together and toss with the cabbage, apple, carrot, nuts just before serving.
