Chicken Kastoori Kebab Recipe
Kastoori Kebab is one of my husband’s most favorite dishes so I really wanted to try making these at home.
I looked for the recipe on several websites and then combined the ingredients according to what I felt kastoori kebabs tasted like.
These kebabs turned out really good and my family just loved it.
Here is the recipe to make these wonderful kebabs.
- Boneless chicken cut in cubes 500g
- Lemon Juice 1 tbsp
- Ginger Garlic Paste 1 tbsp
- White Pepper 1 tsp
- Salt 1 tsp
- Oil 4 tbsp
- Butter 2 tbsp
- Gram Flour 3 tbsp
- Fresh Coriander Finely Chopped 2 tbsp
- Crushed Green Chillies 1 tbsp
- Yolks of 2 Eggs
- Saffron 1/2 tsp (I didn’t use it though)
- Fresh Cream 3 tbsp
- Bread Crumbs 1 tbsp
- Black Cumin 1/2 tsp
- Cardamom Seeds Powdered 1/2 tsp
Marinate Chicken with ginger garlic paste, white pepper and salt and refrigerate for 2 hours.
Take a pan and add oil and butter, fry gram flour till it changes color. Now take 2 tbsp of this mixture out in a small bowl and keep aside.
In the pan that is on stove with gram flour mixture, add bread crumbs, coriander leaves,cream and green chilli and mix well. Now add chicken to this mixture and cook covered for 10 minutes.
At this stage I gave smoke of a coal, for that I kept a piece of coal on stove for 10 minutes, then placed a small piece of aluminium foil in the pan. Put the red coal over it and poured some oil. The coal started leaving the smoke so I covered the pan with a lid and left it for 10 minutes. You can omit this part.
Now mix egg yolks, the gram flour that we kept in the bowl, cardamom powder and black cumin and coat chicken well in that mixture.
The bread crumbs mixture and this mixture will make a thick coating around the chicken and cover it well. The more covered the chicken is with thick mixture, the better.
Then take wooden skewers and pierce through the chicken pieces. There should be around 4-5 chicken pieces on one skewer.
Brush your chicken with oil from all sides really well.
Preheat oven and then place these skewers on aluminium foil and cook for 25 minutes on 170 degree. Flip the sides once.
Yummy kastoori kebabs will be ready.
My husband loves cheese so I put some cheddar cheese slices on 2-3 skewers to make kastoori kebab with cheese.
As far as left over egg whites are concerned, I made a facial mask by adding honey and lemon in one, and hair mask by adding olive oil in one. 😉
