Chicken Parmigiana Recipe
I eat out with my husband very frequently and whether we go to Tuscany Courtyard or Street One Cafe (in Islamabad), my husband orders Chicken Parmigiana most of the times. There was a slight difference in the way both restaurants make it but the basics were pretty much the same.
‘Oh so it is another favorite dish of my husband that I should learn’, I thought yesterday. So I looked for the recipe all across the internet and made it today and trust me it turned out pretty good.
- Skinless Boneless Chicken Breast Fillet 700g

- Garlic Paste 1 tsp
- Bread Crumbs 2 cups (I also made these at home)
- All Purpose Flour 1 cup
- Pasta I used Farfalle and it was tasty and super cute 1 Cup (Boiled)
- Eggs 2
- Mozzarella Cheese Grated 250g
Butterfly chicken breasts and pound really well with a meat mallet so the breasts are really thin.
Season chicken with salt, pepper and rub garlic paste on all the pieces and put in fridge for half an hour.
As I like everything really well cooked so I cooked my chicken pieces with covered lid in a non stick pan for 10 minutes in their own steam.
(Meanwhile I ground bread slices in an electric chopper, put those in oven and turned the oven on on full heat for 3 minutes and then turned it off, I let the crumbs remain in that for next 10 minutes. The bread crumbs were dry but not brown. I then mixed some salt and italian dry mixed herbs in that. )
Coat Chicken pieces with all purpose flour, shake off the excess flour.
Beat the eggs and add a bit of salt and pepper in those. Coat Chicken Pieces in egg batter and then in bread crumbs and fry till they are crispy golden from both sides.
Place the chicken pieces in a baking tray and pour Marinara Sauce on each piece and then a layer of grated mozzarella cheese.
Put those in oven and grill till the sauce turns slightly brown, around 7-10 minutes.
Spread a layer of boiled pasta in the serving platter. I sautéed mine with a bit of olive oil, olives, salt, pepper and mixed herbs.
You can also put some sautéed vegetables around pasta.
Pour hot marinara sauce generously on this pasta
Place your baked crumbed chicken on this bed of pasta and serve.
