Chinese Sweet and Sour Chicken
Chinese Sweet and Sour Chicken is close to Chinese Manchurian in taste, and it has red sauce like sauce of Manchurian but slightly different. I have tried it in many restaurants in Pakistan and came up with this recipe which seems perfect to me.
In the recipe that I am sharing below, I am using cauliflower, mushrooms, capsicum and onion along with chicken. You can change the vegetables that you are using as per availability. I’ll recommend using mushrooms as a must but it is up to you. In Chinese dishes it is mainly the sauce that matters according to my experience.
- Boneless Chicken cut in small cubes 250g
- Black Shiitake Mushrooms Soaked and Cut in thin Strips 2
- Cauliflower Florets cut in Halves 4-5 florets
- Capsicum Cut in long strips 1/2
- Medium Onion Cut in thick long strips 1/2
- Soy Sauce 2 tbsp
- Tomato Ketchup 3 tbsp
- Crushed Garlic 3/4 tsp
- Oil 5 tbsp
- Salt to taste
- Chilli Sauce 2 tbsp
- Black pepper Powder 1/2 tsp
- Chinese Five Spice Powder 1 tsp
- Sweet Chilli Plum Sauce 2 tbsp (or you can use 1 tsp sugar)
- White Vinegar 2 tbsp
- Chicken Broth 1/4 cup
- Corn Flour
Marinate Chicken in a mixture of 1 tbsp soy sauce, 1 tsp corn flour, salt and black pepper and refrigerate for half an hour.
Put a wok or pan on stove on medium heat and add oil in that. Stir fry onion, capsicum and cauliflower in that for 1- 2 minutes, remove from oil and keep aside.
Fry chicken pieces in same oil and when they turn golden and half cooked, remove those from oil and keep aside as well.
In the remaining oil, add crushed garlic and fry till it starts changing color.
Then add chicken broth, ketchup, soy sauce, chilli sauce, sweet chilli plum sauce, vinegar, five spice powder, salt and black pepper and bring to boil.
Add chicken pieces and mushrooms in this sauce and cook for a while so chicken pieces are fully cooked through.
Taste and adjust the seasoning.
Now mix some corn flour with water and pour that mixture in boiling sauce and chicken while constantly stirring it.
In the end mix fried vegetables and serve immediately.
