Jerk Potato Wedges
After making Jamaican Jerk Chicken many times, yesterday I made potato wedges with Jerk seasoning/rub and those turned out really awesome.
You can serve these potatoes as a snack or with tea at tea time. These spicy and tangy wedges are a nice replacement of pakoras. Yesterday I made these accompanied by Jerk Chicken, Mexican Rice and Fruit and Cucumber Salsa and everything tasted just perfect together.
Potatoes 3-4 Big ones cut in wedges
Ingredients for Jerk Seasoning
- White vinegar half cup
- Onion 1
- Ginger paste 1 tsp
- Garlic 4-5 cloves
- Crushed red chili 2 tsp
- Juice of 1 lemon
- Green part of 3-4 spring onions
- Nutmeg powder( jaifel) 3/4 tsp
- Cinnamon powder 1/2 tsp
- Salt 1.5 tsp or as you may like
- Brown sugar 1 heaped tsp
- Dried thyme 1/2 tsp
- Black pepper 1/2 tsp
- Olive oil 1/4 cup
Blend all the ingredients mentioned under Jerk Seasoning title in a food processor and make puree.
Cut potatoes in wedge shape, do not peel.
Put some water to boil in a pan on stove with around 1 tsp salt and boil these wedges in that water for 5 minutes. Remove from water and put on an absorbent paper to dry.
Coat these really well in jerk mixture and put in an oven proof dish and bake for 25-30 minutes on 170. Till the wedges are crisp.
You can put these under grill to get these charred too. Yesterday I didn’t have enough time for that.
