Mexican Rice accompanied by Fruit and Cucumber Salsa
Mexican rice are nice but not great, as we Pakistanis make excellent pulao and biryani using almost same ingredients. Yesterday I made Mexican Rice accompanied by fruit and cucumber Salsa along with Jamaican Jerk Chicken and Jerk Potato Wedges and overall this combination tasted superb.
Salsa is also a mexican dish and it can be made in many ways. Yesterday I made fruit and cucumber Salsa and it was super yummy.
Ok here goes the recipe of Mexican Rice
- Rice 1 cup
- Chicken Broth 2 cups
- 3 Ripe Red Tomatoes peeled and pureed
- Onion 1/2 diced
- Capsicum 1/2 chopped
- Green Chillies 3-4 chopped
- Cumin Powder 1/2 tsp
- Tomato Ketchup 1 tbsp
- Black Pepper 1/2 tsp
- Salt to Taste
- Crushed Garlic 3/4 tsp
- Corn Kernels 2 tbsp
- Chopped Coriander 1/4 cup
- Oil 4 tbsp
Take a pan and add pureed tomatoes and ketchup in that and let it simmer on low heat till tomatoes are cooked.
Then add chicken broth, cumin powder, salt and black pepper powder in that and bring to boil. Turn off the heat.
Take 4 tbsp oil in another pan and add rice, wash rice before putting those in oil.
Stir and cook these rice on medium heat till these turn golden brown.
After that add onion, capsicum, green chilli and crushed garlic and fry for another 2-3 minutes.
Then add corn kernels and chopped coriander leaves and mix.
After that pour the chicken broth and tomato mixture and let it boil on medium-high heat.
When you see that rice has absorbed the mixture, and bubbles of this mixture burst and release steam, then cover it with a lid and cook on very low heat for 20 minutes.
Mexican rice are ready. These rice were fluffy in texture and I was amazed how same basmati rice that I cook everyday changed texture when they were fried before cooking.
Ingredients for Fruit and Cucumber Salsa
- Fresh fruits or canned fruits diced 1 cup ( I used a can of mixed tropical fruit that included pinapple, it was already sweet so I didn’t add any additional sugar)
- Cucumber 1/2 cut in small pieces
- Onion 1/2 chopped
- Capsicum 1/4 cut in small cubed
- Green Chilli 1 Chopped
- Lemon Juice 1 tbsp
- Mint leaves chopped 1 tbsp
- Coriander leaves chopped 2 tbsp
Mix all the ingredients in a bowl and refrigerate. Serve with anything that you like.
