Peri Peri Chicken and Peri Peri Rice
I am sharing the recipe of lemon and herb Peri Peri Sauce, rice and chicken here which is very close to Nando’s style.
You can make it easily at your home and it wont be that expensive.
If you do not like lemon and herb flavour then do not add coriander leaves and green chilies in the recipe I am sharing below.
Lemon and Herb Peri Peri Sauce
- Crushed red Chili 2 tbsp
- Green chilies 2 large
- Paprika powder 1 tsp
- Capsicum 1/2
- Coriander leaves 1/2 cup
- Garlic Cloves 6,7
- Fruit vinegar 1/2 cup (you can also use 1/4 cup fruit vinegar and 1/4 cup white vinegar)
- Oil 1/2 cup
- Mustard paste 1 tsp
- Oregano powder 1 tsp
- Salt 2 tbsp
- Lemon Juice 4 tbsp
Method of Making Sauce
Put all ingredients in a food processor and make a smooth paste. You can preserve it in refrigerator for up to two weeks.
Peri Peri Chicken
Take 1 Whole chicken cut in quarters and apply cuts on it with a knife.
Marinate Chicken pieces with the sauce so they get coated from all the sides and out some sauce in slits as well.
Put it in a covered plastic bowl and refrigerate for 1 day.
Next day pre-heat oven and bake chicken pieces.
If chicken pieces are small bake those on 175 for around 45-50 minutes.
Keep on basting the chicken pieces with sauce and also flip sides.
After that heat a grill pan and cook chicken pieces on low-medium heat for around 5-7 minutes each side to get it charred.
Peri Peri Rice
- Boiled Rice 1 1/2 cup
- Deseeded tomatoes cut in cubes 1 big or two small
- Onion 1 medium chopped
- Capsicum deseeded and cut in cubes 1
- Crushed garlic 1 tsp
- Tomato Ketchup 2 tbsp
- Peri Peri Sauce 2 tbsp
- Black pepper 1/2 tsp
- Soy Sauce 1 tbsp
- Oil 2 tbsp
Take 2 tbsp oil in a pan and fry crushed garlic till it starts changing color.
Add chopped onion and sauté a little.
Add tomato ketchup, peri per sauce, soy sauce, black pepper and mix well.
Then add tomatoes and capsicum.
Mix for 1 minute and add rice.
Mix very well till everything seems well coated with sauces.
Cover with a lid and cook on very low heat for 10 minutes.
Serve hot with Peri Peri Chicken and Sauce.
