Pineapple and Chicken Shashlik Recipe
This sweet, sour and tangy dish is just loved by my family. It is one of the rare dishes through which they eat at-least some vegetables.
I serve it with rice I make with chicken cubes, you can serve this with any fried rice that you like.
I saw a similar recipe on TV once but then I modified it a lot and came up with the recipe that I am sharing below.
- Pineapple Tidbits Can 1 (big) (We’ll need both pineapple chunks and juice)
- Boneless Chicken cut in cubes 500g
- Onion cut in squares 2 medium
- Tomatoes (deseeded and cubed) 2 medium
- Tomatoes (peeled and pureed) 4 medium
- Capsicum cut in squares 2
- Black Pepper 2 tsp
- Lemon Juice 1/4 cup
- Butter 2 tbsp
- Garlic Crushed 1 1/2 tsp
- Red Chilli Flakes 1 tbsp
- Corn Flour 1 tbsp
- Tomato ketchup 1/4 cup
You can make it in many ways, as I make it in using many methods but keep the same ingredients. Sometimes I use skewers sometimes not, sometimes I bake it and sometimes cook in a pan. You can choose the method that you like but I am sharing below the method, that when I use my family just loves it the most.
Rub salt, 1 tsp black pepper and 1 tbsp lemon juice on chicken and refrigerate for 1/2 an hour.
Take a big Casserole dish and place chicken pieces, cubed vegetables, pineapple chunks and butter in that and put it in oven on 170, bake till chicken is cooked through, around 40 minutes. If you want to cook it in a pan then cook chicken pieces first on low heat and when chicken is cooked through, add cubed vegetables and stir fry on very high heat.
Meanwhile prepare the sauce.
For that take a pan and add 2 tbsp oil, put crushed garlic in that and fry till it starts changing color.
Then add pineapple juice, tomato puree, salt, crushed red chilli, tomato ketchup, remaining lemon juice, remaining black pepper and 1 tsp sugar if needed. Adjust the seasoning after tasting it and let it simmer on low heat for 20 minutes. Add a little water if the sauce is too thick.
Now make a thin paste of corn flour mixed with some water and add to the sauce to make it thick.
Pour this sauce over the cooked vegetables and serve with rice of your choice.
