Tasty Aaloo Baingan (Potato and Eggplant) Recipe
This is my mom’s recipe and I cook it when I really crave for it. My husband doesn’t like vegetables so I cook it just for myself mostly.
- 1/2 Kg Eggplants cut in slices lengthwise like potato wedges
- 3 large potatoes cut in big chunks
- 1 head of garlic, peeled and thinly sliced
- 1/4 cup oil
- Red chilli flakes 2 tbsp
- 4 tomatoes chopped
- Ajwain (Ajowan caraway) 1/2 tsp
Take oil in a pan and put it on the stove. Fry garlic pieces in it till they turn golden brown. Throw in the tomatoes and potatoes with salt and fry on medium to high heat till tomatoes get cooked and mashed and oil starts to get separated from tomatoes.
Add eggplant to the pan and sprinkle red chilli flakes and ajwain on it and cover with a lid. Reduce the heat to very low. Cook covered for 50-60 minutes while flipping everything after every 10 minutes. Your yummy and easy dish is ready. You can also put 2-3 whole green chillies in it.
