Thai Curry Powder
I have learned to make this curry powder for Thai pineapple fried rice that I make.
It is really easy and cheap to make it at home, as we have all of these spices easily available in Pakistan and I had all of these in my pantry already so I had to just take the spices and grind these.
This curry powder is slightly different than the Indian or Pakistani curry powder that we use in most of the dishes that we cook in Pakistan. In our all spice powder گرم مصالحہ پاؤڈر that we use in curries we add cinnamon, green cardamom, black cardamom and sometimes nutmeg and mace as well. Still the ingredients used in Thai Curry Powder are also used in many Pakistani dishes and these are easily available everywhere.
- Turmeric 1 tbsp
- Bay Leaves 2-3
- Dry Coriander 2-3 tbsp
- Cumin Seeds 2 tbsp
- Ginger powder 1 tsp
- White pepper 1 tsp
- Crushed Red Chilli 3 tsp
- Cloves 1-2
Toast all the ingredients in a dry non stick pan for 4-5 minutes. Grind these in a fine powder using a food processor/grinder.
Put the ground spices through a sieve so the powder you get is really fine.
Store in an air tight jar and use in your Thai food whenever needed.
