Thai Pineapple Fried Rice Recipe
Thai Pineapple fried rice is a complete meal. I didn’t feel like making any curry or anything else when I cooked it. This is one of the most tasty dishes that I have ever tried and my family loved it a lot.
If you can get fresh pineapple easily, use fresh pineapple, I used canned pineapple chunks to cook mine. I just used chunks and used the sweet juice in a dessert that I was making that day.
To make fried rice, I mostly boil rice a day prior to cooking the fried rice dish and put rice in the fridge. These rice bring the best result. Ok here is the recipe of these heavenly rice 🙂
- Boiled Rice 1 ½ cup
- Pineapple chunks ½ cup or more
- Peas 1/2 cup (blanch in boiling water with 1 tsp sugar)
- Garlic paste 1 tsp
- Thai Fish Sauce 2 tbsp
- Soy Sauce 1 tbsp
- Roasted Cashew Nuts 1/2 cup
- Green chilies chopped 4-5
- Onion 1 small chopped
- Eggs 2 (scrambled)
- Green part of 2 spring onions chopped
- Red chilli flakes 1/4 tsp
- Thai curry powder 1 tsp
- Black pepper powder 1/2 tsp
- Oil 3-4 tbsp
Take oil in a pan and fry garlic paste, you can also grind fresh garlic before starting cooking.
When it starts changing color add chopped onion, sauté it for 2 minutes and then add fish sauce, curry powder, salt and soy sauce.
Mix well and then add rice, pine apple chunks, green chilies,crushed red chilli, cashew nuts and peas, keep on frying.
Then add spring onion and when you hear that sound of frying (crackling) rice your dish is ready.
If you want it spicier add more green chilli, if you want it more tangy, add some lemon juice.
Garnish it with fresh coriander leaves.
You can also add raisins and carrots in this dish. You can adjust salt and spice according to your own taste.
